The most comforting, cozy meal that is perfect for the fall! I’m about to blast the AC and cozy up on the couch while I eat and it’s scary how excited I am to do it 😂 Who knows might fuck around and light a candle and watch hocus pocus. A hell of a lot has changed since my roommate and I used to first make this Sweet Potato Broccoli Mash back in college. It’s honestly the best recipe and it’s superrr healthy even though it doesn’t taste that way. It was definitely the segway from late night burritos to having to actually eat vegetables. Ah, adulthood….
SWEET POTATO BROCCOLI MASH
- 3 medium sized potatoes
- 1 tbsp avocado oil
- 1/2 diced white onion
- 3-4 crushed garlic cloves
- 1/2 cups chopped broccoli and cauliflower
- 1/3 cup Greek yogurt you can skip this to make it dairy free
- salt, pepper and garlic salt to taste
- fresh thyme
- chicken sausage from Trader Joe's
Start by microwaving or baking your sweet potatoes until soft.
Heat up a large skillet over medium heat and add avocado oil. Add in your veggies (diced white onion, crushed garlic cloves and chopped broccoli and cauliflower)! Sauté until soft (5-7 minutes) then add to a large saucepan with your mashed sweet potatoes.
Add in Greek yogurt (you can skip this to make it dairy free) and season with salt, pepper and garlic salt to taste. I topped it with some fresh thyme as well for some added flavor.
