GF SUGAR COOKIES WITH CHAI SPICED FROSTING
Ingredients
DRY
- 1 ½ cups gluten-free all purpose flour
- ¼ tsp salt
- 1 ½ tsp baking powder
- 2 scoops @furtherfood vanilla collagen (optional)
WET
- ½ cup sugar
- ½ cup butter room temperature
- 1 egg room temperature
- 1 tsp vanilla
Chai Spiced Frosting
- 6 oz @kitehillfoods almond cream cheese softened to room temp (you can use regular too)
- ¼ cup @fourthandheart ghee (butter works too)
- 1 ½ cup powdered sugar
- ½ tsp vanilla extract
- ½ tsp salt
- ½ tsp cinnamon
- ¼ tsp ginger, nutmeg and cardamom
Instructions
Cookies
-
Line a baking sheet with parchment paper and preheat oven to 375 degrees.
-
In a medium sized bowl, whisk dry ingredients together and set aside.
-
In a stand-up mixer using the paddle attachment (you can also use hand held electric mixer), beat sugar and butter on medium speed for 2 minutes or until white and fluffy. Add in egg and vanilla and mix for another 2-3 minutes until everything is combined.
-
Add in flour and mix together on low speed until dry ingredients are fully incorporated into wet. Using a cookie scooper (equal to 1-2 tablespoons) scoop out dough and then roll in your hands to form a ball. Place on baking sheet and using your hands lightly press down to flatten out cookie a little bit.
-
Bake in oven for 8-10 minutes or the bottoms are golden. Let cool on baking sheet for 5 minutes before transferring to cooling rack to cool completely.
Chai Spiced Frosting
-
Combine all ingredients well with a mixer.
