It’s not really the Super Bowl until you have something with buffalo sauce on the table. Personally, I think these Buffalo Chicken Meatballs fit in just as perfectly at your Super Bowl party than they do in a crunchy salad or bowl. Truly a staple year round 👌🏼 Did I mention they’re healthy?? And like really easy to make. And I just realized they’re Whole30 too. Wow go me!
BUFFALO CHICKEN MEATBALLS
- 1 lb ground chicken
- 1/3 cup almond flour
- 1 egg
- 1/4 cup minced celery
- 2 tbsp minced green onion
- 1 tsp onion salt & pepper (regular salt works too)
- buffalo sauce (I use @thenewprimal)
Combine ground chicken, almond flour, an egg, minced celery,minced green onion, and onion salt & pepper.
Combine, form into balls and bake for 10 minutes each side at 400 degrees.
Let cool, toss in your favorite buffalo sauce and serve with green onion and a drizzle of ranch on top! Makes about 8 medium sized meatballs.
