She’s a little messy, but WOW she’s a beauty 😍 Broccoli Cheddar Stuffed Chicken Breasts belong on this week’s menu. They might not be photogenic, but trust me when I say this is THE BEST stuffed chicken I’ve ever had. I mean who doesn’t love broccoli + cheddar?! My tip of the day for you beginner chefs out there, invest in a meat thermometer! They’re like $10 and will help you determine when your meat is cooked to perfection without having to cut into it!
BROCCOLI CHEDDAR STUFFED CHICKEN BREASTS
- 2 large chicken breasts
- salt and pepper
- 1 tbsp olive oil
- 1/2 red or white onion diced
- 3 cloves of garlic minced
- 1 cup broccoli florets chopped
- 1/2 tsp onion salt
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- a dash of cayenne (if you like a little spice)
- 1/4 cup shredded cheddar cheese
- 1/3 cup Greek yogurt
Cut chicken breasts longways 3/4 of the way to the other end. Season both sides with salt and pepper.
In a medium sized skillet, heat olive oil over medium heat. Add in red or white onion and garlic and sauté for 6-7 minutes until the onion becomes soft.
Add in broccoli florets and season with onion salt, pepper, garlic powder, paprika and cayenne. Sauté for another 5 minutes then add mixture to a medium bowl.
Combine with shredded cheddar cheese and Greek yogurt. Add mixture to the chicken breast and sear on a hot pan for 2 minutes each side
Transfer skillet (if oven safe) to the oven and bake at 425 degrees for 20-25 minutes until the center reaches 160 degrees Fahrenheit. Let cool, slice and serve!
