I have an unhealthy obsession with peanut sauce and honestly I don’t even care. I put it on fuggin everything you guys. Makes me happy so I do it THAT’S IT END OF STORY. Also, low key love frozen veggies? So easy and they’re just as good for you (just watch out for added ingredients should just be veggies!). Loving tofu as well because it stays good in the fridge for months!
Crispy Tofu with Peanut Sauce
- 2 tbsp peanut butter
- 1 clove garlic minced or crushed
- 1 tbsp lime juice
- 1 tsp red curry paste
- 1 tbsp soy sauce
- 1 tsp honey
- 1/2 tsp sriracha
- white rice & veggies to serve
Cut your tofu block in half longways and place on a cutting board. Put a dish towel on top, then place a cutting board on top of that. Stack a few cook books or pots and pans on that to make sure we get all the moisture out of the tofu! Leave this here for 15 min.
Cut it into bite sized pieces and cook in your air fryer for about 12 minutes at 400 degrees, tossing halfway through (regular oven I would do 450 degrees for 10 minutes each side). Let cool for 5 minutes then toss in your peanut sauce!
To make the peanut sauce, just whisk together all ingredients until smooth.
Serve with white rice and your choice of veggies! I topped with sambal too bc I’m obsessed with hot sauce.
