This was my first recipe I ever posted on this account and it’s still one of my favorites. It’s soooo easy to make, delicious and healthy. Thanks momma for the recipe, my forever inspo!
Pistachio Pesto Salmon
- 2 4 oz wild-caught salmon filets
- 1/4 cup pistachios
- 1/2 cup fresh basil
- 1/4 cup olive oil
- 1 lemon juiced
- 2 cloves garlic
- 2 tbsp parmesan cheese optional
- salt & pepper
Blend all ingredients with an immersion blender or food processor.
Preheat oven to 400 degrees.
Generously coat your salmon and bake for about 12 minutes at 400 degrees.
Served with asparagus and Right Rice.
You can use this pesto on chicken, shrimp, pasta, etc.
