How many times have you made pasta during Q? I would say upwards of 20 times for me 😂 It’s just so easy and easy to throw together with what you have on hand. I personally am SO tired of red sauce so I decided to test out an easy white sauce and ooohhhh my goodness so good. So here’s the newest Brocc original: Veggie Pasta with White Sausage Sauce. Give yourself 15 minutes, an @ashlandhardseltzer and you’ll have dinner in no time!
Veggie Pasta with White Sausage Sauce
- 1/2 lb hot Italian sausage casing removed
- 1 8 oz box of pasta I used @eatbanza rotini
- 1 tbsp butter
- 1 cup zucchini and/or squash chopped
- 1/2 cup arugula
- 1 lemon juiced
- grated Parmesan to serve I used about 1/3 cup
- salt & pepper to taste
Cook pasta according to the package.
Heat a large skillet over medium heat. Add in your sausage and break it up with a wooden spoon. Once it’s just cooked through, remove and set aside.
Add the butter to the same pan and sauté your zucchini and squash for about 5 minutes or until soft. Season with salt & pepper. Add in the arugula, sausage, lemon juice and cooked pasta. Toss to combine.
Season to taste, add more butter or olive oil if it is a bit dry and top with freshly grated Parmesan.
