
There’s something just so beautiful about Chicken & Waffles and how they are the most unlikely of friends, but they somehow work so well together. They’re the ultimate comfort food when it comes to brunch, neck and neck with Biscuits and Gravy which is also one of my favorites. I think that will be a bit trickier to “healthify.”
In the meantime, I managed to pull off a Paleo Chicken & Waffles recipe that is quite fantastic if I do say so myself. The Maple Hot Honey really makes it and lucky for us it takes about 3 seconds to whip up. Overall, this is a super simple recipe that won’t take you more than 20 minutes to pull together. Enjoy! xx

Paleo Chicken & Waffles with Maple Hot Honey
Ingredients
- 4 boneless chicken thighs
- 2 eggs
- 1/2 cup almond flour
- 1/4 cup tapioca flour
- 1/2 tsp salt & pepper
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- avocado oil
- 8 Birch Benders Paleo Toaster Waffles
- chopped parsley to garnish optional
Maple Hot Honey:
- 1/3 cup maple syrup
- 2 tbsp honey
- 1 tsp sriracha
Instructions

Heat avocado oil in a skillet over medium heat, there should be enough oil to fill the pan up about 1/4 of an inch.

Place 4 boneless chicken thighs between two pieces of plastic wrap and lightly pound with either a meat mallet or the bottom of a cup will work too. It should be about 1/2 inch thick.

Beat an egg in a bowl for the egg wash and then make your breading by combining flours and spices.

Coat the chicken in the egg wash, then the breading mixture and place carefully in the hot skillet. Cook for about 5 minutes each side or until the chicken is crispy and cooked through.

Place it on top of your toasted waffles and drizzle with the maple hot honey sauce (just combine all ingredients). I added a little parsley for brightness and color.
