I don’t care what anyone says Hamburger Helper is a GENIUS IDEA. But the ingredients in the classic boxed version… yikes. This cleaned up recipe is way more flavorful, yet still tastes like a warm hug from your mom. It’s super quick and easy to make too!
Cleaned-Up Hamburger Helper
- 4 cups pasta shells uncooked
- 1 lb organic ground beef
- 1/2 white onion sliced
- 2 cloves garlic minced
- 1 + 1/4 cups white mushrooms diced
- 1 tbsp fresh thyme leaves + more to top
- 1/2 cup Greek yogurt
- 3 tbsp unsweetened almond milk
- 2 tbsp grated Parmesan + more to top
- 2 tbsp white wine optional
- 1/2 tsp paprika
- Salt & pepper
- Avocado or olive oil
Cook pasta according to package.
In a large saucepan, heat 1 tbsp of avocado oil over medium heat. Add your onions and sauté until translucent and slightly browned (about 5-7 minutes). Add your mushrooms and garlic and sauté for another 3-4 minutes. Season with salt & pepper. Add white wine (opitonaand fresh thyme.
Then add in your ground beef and cook until browned while breaking it up with a wooden spatula. Season with salt, pepper and paprika.
Next add the Greek yogurt, almond milk and parmesan and stir to combine.
Add to your cooked noodles and season to taste.
Top with fresh thyme, Parmesan cheese and freshly cracked pepper.
