Yoooo we’ve been sleeping on peas you guys!!! I had a random craving for them and I had a couple bags in my freezer that I panic bought back in March. Remember when everyone destroyed the grocery stores a few months ago?! Glad we’ve moved on, that was DARK.
ANYWAY, these peas will change your world. They have bacon.
Peas with Shallots & Bacon
- 1 13 oz bag of frozen peas
- 4 strips of bacon chopped
- 1 shallot thinly sliced
- 2 tsp Apple cider vinegar
- Grated Parmesan cheese
- 1/2 tsp red chili flakes
- Salt & pepper
- Fresh parsley to serve
Defrost your peas in the microwave according to the package. Drain excess liquid.
In a large skillet over medium heat, add your chopped bacon. Cook, stirring occasionally, until the bacon is crispy. Remove from the pan and place on a plate covered in paper towels to soak up the grease.
Leave the bacon grease in the pan and add your shallots. Sauté for 3-4 minutes or until the shallot becomes translucent and fragrant.
Add in your defrosted peas, crispy bacon, apple cider vinegar and season to taste with red chili flakes, salt & pepper.
Top with Parmesan cheese and fresh parsley to serve!
