I’m going to have to give Mac & Cheese the number one spot for my ultimate comfort food 🧀 ESPECIALLY now that I’ve made it with the shredded unexpected cheddar WOW.
We all love and respect my Millionaire Mac & Cheese recipe, but let’s be real sometimes you just want to whip up some Mac for a quick dinner. I GOT YOU. This recipe is literally just as easy as making the boxed stuff and it tastes one million times better. Are you sold yet? Good. Here’s the recipe!
Weeknight Mac & Cheese
- 3 cups cooked pasta
- 1 cups shredded cheddar cheese I used @traderjoes unexpected cheddar
- 2 tbsp butter
- 1 tbsp all purpose regular or gluten free flour OR 1 tsp tapioca flour you can skip this if needed but the cheese sauce won’t be as thick
- 1 cup milk
- 1/2 tsp garlic powder
- Kosher salt
- Black pepper
- Red chili flakes optional
- Steamed broccoli optional
Cook pasta according to package. Tips: generously salt your pasta water and do NOT rinse your pasta.
In a saucepan over medium heat, melt the butter down then add the flour and whisk to combine.
Add the milk, continuing to whisk, until combined and brought to a simmer. Then add in your cheese until melted and whisked smooth.
Remove the pan from heat and mix in cooked pasta. Stir in the broccoli and seasonings to taste.
For a thinner sauce, add more milk. For a thicker sauce, add more cheese.
