
When you can’t resist your own cooking (peep the bottom right) 🙃 I’m already bracing myself for the comments “you should try adding….” BUT YOU GUYS. I can promise you that is the absolute best Bruschetta you will ever have. It doesn’t need cheese or vinegar or anything extra.
The key is using really high quality tomatoes and olive oil. I recommend getting your tomatoes at the farmers market and as for the olive oil do some research online and don’t be afraid to spend a little extra $$. It makes all the difference! I usually get mine at Eataly. I’ve tried a few different brands and I haven’t tried one I didn’t love yet!

Classic Bruschetta
Servings 6 people
Ingredients
- 3 large vine ripened tomatoes
- 2 tbsp high quality olive oil plus more for grilling the bread
- 1/2 tsp Kosher salt
- 1/2 tsp freshly cracked black pepper
- 6-8 slices of French bread
- 1 clove of garlic
- Fresh basil
Instructions

Core and dice your tomatoes and place in a medium sized bowl. Add the olive oil, salt & pepper and place in the fridge for at least 30 minutes.

Heat a skillet over medium heat and add a drizzle of olive oil. Add the bread until it is crispy and golden brown on each side.

Rub the garlic clove on the bread for a subtle garlic flavor. Top with your bruschetta and fresh basil!
