
Absolutely do not have time for anything but this Pesto Chicken Pasta tonight. Sometimes you just need a 15 minute meal that tastes like a gourmet restaurant you know?? Quick & easy to make, DELICIOUS, and meal prep friendly.

15 Minute Chicken Pesto Pasta
Ingredients
- 1 lb chicken breast
- 8 oz uncooked pasta I used @eatbanza penne
- 1/2 cup pesto
- 1/3 cup chopped sundried tomatoes
- 2 cups fresh spinach
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp red chili flakes + more to serve
- Kosher salt
- Freshly cracked black pepper
- Avocado oil
- Grated Parmesan to serve
Instructions

Cook pasta according to package. While that cooks, heat a large pot or deep pan over medium heat.

Season your chicken generously with salt, pepper, garlic powder, oregano and red chili flakes (only if you like a little spice!). Add a drizzle of avocado oil once the pan is hot then add your chicken. Cook for about 5 minutes on each side- this will depend on the thickness of your chicken! Once it’s cooked through, remove from the pan and dice it into bite size pieces.

Add spinach and sun dried tomatoes into the same pan and stir to wilt. Season with salt & pepper. Add in your cooked & drained pasta, chopped chicken, and pesto and toss to combine. Season to taste.

Serve with freshly grated parm and red chili flakes if you like some spice!
