Broccoli Unexpected Cheddar Soup

Entrees· Recipes

Jump to Recipe

I was so excited to try the Unexpected Broccoli Cheddar Soup from Trader Joe’s but the ingredients did NOT pass the vibe check. As the OG broccolinis know from last fall, I put my blood sweat and tears into perfecting this recipe, and now we get to make it even better by using unexpected cheddar šŸ˜‹ If you don’t live near a TJ’s, not to worry! Regular cheddar works just fine.

Broccoli Unexpected Cheddar Soup

Servings 6 servings

Ingredients

  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 white onion chopped
  • 2 carrots diced
  • 1 large celery stalk chopped
  • 3-4 (about 3 cupgolden potatoes peeled and chopped
  • 3 cups broccoli florets stems removed
  • 2 1/2 cups low sodium vegetable broth
  • 1 1/2 cups milk I used almond
  • 1 cup unexpected cheddar cheese
  • 2 tsp yellow mustard
  • 1 tsp paprika
  • 1/2 tsp cayenne
  • 1 tsp salt & pepper + more to taste

Instructions

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add in your chopped veggies & potatoes except the broccoli and sauté for 6-7 minutes. Add in broccoli, mustard and seasonings and stir to combine.
  3. Add the veggie broth and milk and bring to a boil. Cover and let simmer for about 15 minutes or until potatoes are soft.
  4. IN SMALL BATCHES, add the soup to a blender to blend or use an immersion blender. Just pulse it as you don’t want it completely blended. For more texture, remove a cup or two before blending then add it back in. Add more broth if it’s too thick.
  5. Stir in the cheese and season to taste.

Sunday dinner šŸ‹ . Ingredients: 12 oz spaghetti Sunday dinner šŸ‹
.
Ingredients:
12 oz spaghetti
1 lemon, juiced and zested
1 cup freshly grated parmesan cheese
4 tbsp butter
Freshly cracked black pepper
Kosher salt
Red chili flakes
Parsley to serve
Instructions:
Cook your pasta according to the package- do not strain it! Save about 1/2 cup of pasta water.
In a medium sized bowl, whisk together the grated cheese, lemon zest, and slowly add in pasta water to create a thick creamy paste. Set aside.
Heat a large saucepan over medium heat and add about 1 tsp of black pepper and butter. Once the butter is melted, add about 1/3 cup pasta water to the pan.
Using tongs, add the pasta straight from the water it was cooked in to the pan. Add in the cheese sauce from earlier and combine. Season with salt, pepper, and red chili flakes. Add more pasta water if the pasta looks dry.
Remove from heat and add the lemon juice. Stir to combine and season to taste. Serve with fresh parsley and more cheese!
