I started buying the Romesco Sauce from Trader Joe’s a couple months ago, and while it is super delicious I knew I could make a better version at home. This sauce is so easy to whip up and goes great on fish, chicken and veggies. It has been my go to snack with cut up vegetables!
Romesco sauce is traditionally made with regular almonds, but of course being the extra gal that I am, I decided to use marcona almonds. Either work, but I highly recommend this upgrade!! xx
Marcona Almond Romesco Sauce
- 1 cup almonds I used marcona almonds
- 1 12 oz jar roasted red peppers drained
- 3 roma tomatoes cut into fourths
- 1/4 cup Extra Virgin Olive Oil plus more for roasting the tomatoes and to serve
- 1/3 cup flat leaf parsley
- 2 cloves garlic
- 1 lemon juiced
- 1 tbsp red wine vinegar
- Kosher Salt
- Fresh veggies to serve
Preheat your oven on the highest broil setting. Place your tomatoes on a baking sheet and drizzle with EVOO and salt. Broil for about 5 minutes then let cool. Remove the skins of the tomatoes.
Blend all ingredients in a blender or food processor until the sauce reaches your desired consistency. Add more salt to taste.
Serve with your fresh veggies, crackers, bread, whatever else you can think of!
