
Never did I ever think I would describe carrots as “addicting” or “delicious” but here we are… These Maple Roasted Carrots are the perfect Thanksgiving side and they are anything but boring! Not only are they gorg they taste insanely good and will please even the pickiest of guests. Make this easy recipe to add some color and flavor to your Thanksgiving menu!

Maple Roasted Carrots with Pecans & Goat Cheese
Ingredients
- 1 lb multi-colored carrots
- 2 tbsp olive oil
- 1 tbsp maple syrup
- 1 tsp Kosher salt
- 1/2 tsp black pepper
- 4 oz crumbled goat cheese
- 1/3 cup crushed pecans
- 1/4 cup fresh parsley
Instructions

Preheat oven to 400 degrees.

Cut the carrots in half lengthways and then in half or fourths depending on the size you like. You can also leave them whole if you want!

Coat the carrots in olive oil, maple syrup, salt and pepper and place in a baking dish in one single layer.

Cover with foil and bake for 30 minutes or until carrots are almost soft. Remove the foil and bake for another 10-15 minutes until carrots are soft.

Serve with crumbled goat cheese, pecans and parsley on top.
