Maple Roasted Carrots with Pecans & Goat Cheese
- 1 lb multi-colored carrots peeled
- 2 tsp olive oil
- 1 tbsp maple syrup
- Kosher salt & pepper
- Goat cheese, pecans and parsley to top
Preheat oven to 400 degrees.
Coat your carrots in olive oil, maple syrup, salt and pepper and place in a baking dish.
Cover with foil and bake for 30-40 minutes or until carrots are soft.
Serve with crumbled goat cheese, pecans and parsley on top.
