We officially have no excuse not to prep some meals for the week because these Sheet Pan Chicken Fajitas are too easy to make and leave almost no dishes to clean up! I like to serve them with brown rice or in a tortilla. You can also add toppings like cheese, sour cream, guacamole and salsa. YUM!
Sheet Pan Chicken Fajitas
- 1-1/12 lbs chicken breast cut into thin strips
- 2 bell peppers cut into thin slices
- 1/2 yellow onion sliced
- 1 lime
- 1/2 packet taco seasoning
- 2 tbsp avocado oil
- Cilantro to garnish
- Choice of rice or tortillas
Preheat oven to 400 degrees.
Add your peppers, onions, and chicken to your sheet pan and toss with the seasoning and avocado oil. Make sure everything is spread out and not overlapping.
Bake for 20 minutes or until chicken is cooked through. Top with fresh cilantro.
Serve over rice or in a tortilla. You can top with salsa, guacamole, sour cream or whatever you’d like!
