This healthy side dish is jam packed with anti-inflammatory ingredients and is also SO delicious! I love pairing it with a saucy protein, like shrimp curry. It will have you feeling like a million bucks!
I meal prep this on Sunday or Monday and keep it in the fridge for the week. It takes less than 15 minutes to throw together!
Lemon Turmeric Quinoa
- 1 cup uncooked quinoa
- 2 lemons juiced and zested
- 1 tsp turmeric powder
- 1 tsp salt and pepper
- 1 tsp coconut oil
Cook 1 cup of quinoa with 2 cups of water, or according to your package instructions 🙂
Once done and cooled, add the coconut oil, salt and pepper, turmeric powder, juice of 2 lemons, and zest! Mix well
Add some extra lemon zest on top, or even a lemon slice for garnish
