This Turkey Sweet Potato Skillet is everything you need in a healthy, savory meal and you only dirty one pan! I’m also going to definitely eat this for breakfast tomorrow with a fried egg on top…. YUM!
One Pan Turkey Sweet Potato Skillet
- 1 lb ground turkey
- 1 tbsp avocado oil
- 1/2 white onion minced
- 3 cloves garlic minced
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp chili powder
- 1 bell pepper chopped
- 1 large sweet potato peeled and chopped into small cubes
- 1 cup broccoli chopped
- 1/2 cup water
- 1/3 cup shredded mozzarella cheese
- 2 tbsp cilantro
- 2 tbsp green onion or chives
- 1/4 cup Greek yogurt
Heat avocado or olive oil in a large cast iron skillet over medium heat.
Add ground turkey, onion and garlic. Cook until turkey is browned.
Add the garlic powder, cumin, salt and pepper and mix well.
Add the bell pepper, cubed sweet potatoes, broccoli, and water. Stir and cover for about 15-20 minutes or until potatoes are tender.
Add additional spices if needed and top with shredded mozzarella, cilantro, green onions and/or Greek yogurt.
