This Turkey Sweet Potato Skillet is everything you need in a healthy, savory meal and you only dirty one pan! I’m also going to definitely eat this for breakfast tomorrow with a fried egg on top…. YUM!

One Pan Turkey Sweet Potato Skillet
Servings 4 servings
Ingredients
- 1 lb ground turkey
- 2 tbsp olive or avocado oil
- 1 yellow onion diced
- 2 cloves garlic minced
- 1 tbsp chili powder
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp cumin
- 1 bell pepper diced
- 2 cups broccoli florets chopped
- 1 large sweet potato roughly peeled and chopped into ½ – ¾ in cubes (regular potatoes work here too)
- 1/2 cup water
- 1/2 cup shredded mozzarella cheese
- Cilantro & green onion to garnish
- Greek yogurt or sour cream
Instructions

Heat avocado or olive oil in a large skillet over medium heat.

Add onion and garlic and saute until fragrant, about 2-3 minutes. Add in the ground turkey and break it up with a wooden spoon or masher. Cook until the turkey is just browned. Add the chili powder, garlic powder, cumin, salt and pepper and mix well.

Add the bell pepper, cubed sweet potatoes, broccoli, and water. Stir, reduce heat to low, and cover for about 15-20 minutes or until potatoes are tender and water is absorbed.

Add additional spices if needed and top with shredded mozzarella, cilantro, green onion and a dollop of Greek yogurt or sour cream. I love adding some hot sauce too!
