Nothing beats a big bowl of garlicky Beef & Broccoli with white rice 👌🏼 This is my go to on a gloomy Sunday (plus there’s always leftovers for the week). It honestly tastes even better the next day!
I made this in my InstantPot, but you can totally make it in a Dutch oven or regular pot with a lid. You can also substitute the beef for chicken or even tofu if you’d like. It’s PERFECTION!
InstantPot Beef & Broccoli
- 1 1/2 lb beef I used stew meat
- 1 tbsp avocado oil
- 1/2 cup beef broth
- 1/2 cup soy sauce
- 1/4 cup honey
- 2 tbsp sesame oil
- 4 cloves garlic minced
- 1 tbsp ginger grated
- 1 tsp chili sauce optional
- 2 tsp tapioca flour or arrowroot starch
- 1/4 cup warm water
- 2 cups broccoli florets
- Sesame seeds and green onion to garnish
- White rice to serve
Turn InstantPot to saute setting.
Season beef with salt. Add avocado oil to InstantPot.
Once the oil is hot, add in your beef to brown on each side. The beef should not be overlapping, so this can be done in batches. Place browned meat to the side.
Once all the meat is browned, add back into the pot and pour in your sauce.
To make the sauce, whisk together beef broth, soy sauce, honey, sesame oil, garlic, ginger and chili sauce.
Stir to combine, lock the lid in place, ensure the valve is closed and pressure cook on high for 11 minutes. If you’re simmering in a regular pot, cover over low heat for 30 minutes.
When the time is up, turn the InstantPot off and quick release the pressure until the valve drops.
Turn the heat back to saute. Whisk together tapioca flour + 1/4 cup warm water to create a slurry. Add into the pot and stir until sauce thickens.
Add in your broccoli. Lock the lid and leave the valve open. The broccoli will be cooked in 2-3 minutes.
Serve over rice and garnish with green onion and sesame seeds.
