
Let’s make a GRAIN FREE LEMON LOAF 💛🍋 Made this in honor of my momma because she loves lemon almost as much as I do! This took quite a few tries to nail, but it came out perfect. It just screams spring and it is the perfect addition to any brunch spread. I used almond flour as the base to make this loaf grain free.

Grain Free Glazed Lemon Loaf
Ingredients
Grain Free Lemon Loaf
- 3 eggs
- 1 cup sugar
- 1/4 cup sour cream
- 1 lemon zested and juiced
- 1/4 cup olive oil
- 2 tbsp milk
- 1/2 tsp vanilla extract
- 1/4 tsp kosher salt
- 2 cups almond flour
- 1/3 cup coconut flour
- 2 tsp baking powder
Lemon Glaze
- 3/4 cup powdered sugar
- 1 lemon juiced
Instructions

Preheat oven to 350 degrees.

In a large mixing bowl, beat together eggs and sugar until smooth. Add the zest and juice from one lemon, sour cream, olive oil, milk and vanilla extract. Mix well.

In a separate bowl, combine almond flour, coconut flour, baking powder and salt.

Mix both mixtures just until they are combined, being careful not to over mix!

Add batter to a parchment lined or well greased loaf tin. Bake for 1 hour or until a tooth pick comes out of the center clean.

To make the icing, combine lemon juice and powdered sugar until you have a nice, thick glaze! If it gets too thick, feel free to add a splash of milk to thin it out again. If it’s too thin, add more powdered sugar. It’s really impossible to mess this up 😉

Let the loaf cool then top with the glaze. Enjoy on your brunch table with a cup of coffee 💛
