
The easiest dessert that is healthy enough to eat for breakfast (sans ice cream of course). I am not a huge dessert gal, but I love anything with lots of fresh fruit. It really is the most simple recipe you guys! I always make it for 4th of July, Memorial Day, or any summer potluck. It’s always a hit!

Berry Cobbler
Ingredients
- 3 cups fresh berries
- 1 lemon
- 2 tbsp maple syrup
- 2 tbsp arrowroot starch
- 1 1/2 cup granola
- 2 tbsp coconut oil + more to coat baking pan
- vanilla ice cream
Instructions

Preheat oven to 350 degrees.

Add berries in a large bowl – I used strawberries (cut into 4’s), blackberries and raspberries. Combine with the zest and juice from the lemon, maple syrup, and arrowroot starch (or any other thickening agent – tapioca flour would work too).

For the “crumble,” pulse the granola with coconut oil in a food processor.

Add the berry mixture to a circle baking pan coated with coconut oil, top with crumble and bake for about 25-30 mins. Top with ice cream and serve warm!
