
Do you ever just crave ranch dressing and decide what you’re going to eat based off that? Yeah, that happened tonight. And then the most beautiful creation came from it – ZUCCHINI CAULIFLOWER FRITTERS! This photo wasn’t exactly insta worthy in my opinion but you deserve to know this recipe no matter how non-photogenic fritters are amazing!

Zucchini Cauliflower Fritters
Ingredients
- 2 medium-sized zucchinis
- 1/2 cup cauliflower rice
- 2 eggs
- 3/4 cup almond flour
- 3 tbsp grated Parmesan cheese
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- avocado oil
- ranch dressing to dip!
Instructions

Grate your zucchinis and squeeze out excess water. You can use a nut milk bag OR place in a bowl and squeeze the excess water out with a paper towel until the zucchini is dry.

Put the dry grated zucchini in a large bowl and add eggs, cauliflower rice, almond flour, Parmesan cheese, baking powder, salt & pepper and garlic powder. Mix em’ all together!

Make little patties and cook on medium to high heat with some avocado oil for 4-5 minutes each side or until crispy.

Serve with ranch dressing!
