The BEST veggie burgers I’ve ever had 🍔 These Sweet Potato Black Bean Burgers are my favorite whether you serve them as a regular burger with a bun, on top of a crunchy salad with ranch or even with a fried egg on top for breakfast. They’re super easy to make with simple ingredients, like always! Can’t wait for you all to try!!
Sweet Potato Black Bean Burgers
- 1 1/2 cup steamed sweet potato with skins removed
- 1 can black beans drained and rinsed
- 1/2 cup cooked and cooled quinoa
- 1/3 cup almond flour
- 1 egg
- 1 tbsp green onion chopped
- 1 tsp chili powder
- 1 tsp onion salt
- 1 tsp salt & pepper
- Avocado oil
- Toppings: lettuce, tomato, avocado, cheese, ketchup, ranch, you name it!
To steam the sweet potato, just stab it a few times with a fork and microwave for about 5-7 minutes, flipping halfway through. You can also bake at 350 for about an hour.
Mash black beans with a fork or potato masher. Add in remaining ingredients, combine well then form into patties.
Heat a drizzle of avocado oil in a large skillet over medium heat. Cook for 3-5 minutes each side. Serve with desired toppings. I did mine on top of a salad with romaine, cucumber, cherry tomato, green onion, grated parm and my homemade ranch (recipe on my blog).
