NO COOKING REQUIRED healthy dinner 👏🏼 Look, I love cooking but sometimes I am straight up not in the mood. This version of the Le Bowl requires minimal effort and no actual cooking at all. Clearly it’s become a weeknight staple… ENJOY!
Rotisserie Chicken Le Bowl
- 4 oz rotisserie chicken shredded
- 1 cup arugula
- 1/3 cup brown rice
- Small handful of cherry tomatoes
- 1/2 avocado
- Parmesan cheese
- Black pepper
- 1/3 cup Greek yogurt or Mayo
- 1 tbsp sriracha
- 1 tbsp sesame oil
- 1 tbsp water
Whisk together all ingredients for the sriracha Mayo. Add water as needed for thickness (should be a dressing consistency).
Layer the bowl in order: arugula, brown rice, tomatoes, avocado, chicken, cheese then drizzle with sauce. Makes 1 bowl with leftover sriracha mayo!
