
My dad gave me the task of using the excess amount of tomatoes he has in his garden and I think I really nailed the assignment 🍅 This Tomato Bacon Jam is officially going on every burger and charcuterie board I make from now on. SO. DANG. GOOD. 🔥 Would still be delish without the bacon for my vegetarian friends. Just add some oil in the pan before you add the onions 👍🏼

Tomato Bacon Jam
Ingredients
- 12 oz package of bacon
- 2 lbs tomatoes cut into chunks
- 1 yellow onion diced
- 1/2 jalapeno minced
- 1 tbsp apple cider vinegar
- 1/4 cup brown sugar or maple syrup
- 2 tsp paprika
- 1 tsp ground mustard
- 1 tsp kosher salt
- 1/2 tsp pepper
Instructions

Heat a Dutch oven or deep skillet over medium heat. Add in bacon and cook until crispy.

Remove the bacon and set aside. Add the onion and jalapeño into the same pan. Saute for about 5 minutes then add in remaining ingredients, crumbling the bacon in small pieces as you add it back in.

Stir to combine and bring to a boil. Turn heat to low and let it simmer for one hour.

Refrigerate overnight for best consistency and flavor! Serve on a burger, sandwich or with crackers.
