The @belcampomeatco burger is in a league of its own, so obviously I had to recreate it for you guys 🍔 I’m pretty shocked at how amazing it turned out… like I really nailed this one. It’s really just about using HIGH QUALITY 100% grass-fed & finished beef. Not only does it taste better, but it is WAY more nutritious and environmentally friendly than conventionally raised. I, of course, used @belcampomeatco beef and it is a MUST in this recipe!

The Belcampo Burger Recreated
Servings 2 burgers
Ingredients
- 1 lb @belcampomeatco grass-fed & finished ground beef
- Kosher salt
- Black pepper
- 2 brioche buns I get mine from Trader Joe’s
- 1/2 tbsp butter
- 1/2 yellow onion sliced
- 1-2 tbsp olive oil
- 2 slices white cheddar
- 2-4 butter lettuce leaves
Special sauce:
- 1/3 cup mayo
- 2 tbsp ketchup
- 1 tbsp relish
- 1 tsp apple cider vinegar
- Pinch of salt
Instructions
-
First, make the caramelized onions. Heat a pan over medium-low heat and add olive oil and sliced onions. Season with salt and pepper. Stir occasionally until onions become soft and a caramel color, about 45 minutes.
-
Let your beef come to room temperature for about 15 minutes.
-
Form the beef into 2 patties and use your thumb to press in the middle a bit.
-
Heat a skillet or grill over medium-high heat.
-
Season each patty generously with kosher salt and pepper.
-
Once the skillet or grill is hot, add your burgers. Mine took about 2-3 minutes each side for a medium rare burger. When you flip them, add the cheddar cheese and cover with a lid so the cheese melts.
-
Remove the burgers from the pan or grill and let them rest while you toast the buns with a little butter on the skillet. This should only take about 1 minute.
-
Assemble your burger by adding special sauce to one side of the bun, then the patty, caramelized onions and butter lettuce.
