Gluten Free White Chocolate Chip Pumpkin Oatmeal Cookies

Ingredients
- 1 stick of butter 1/2 cup, softened at room temp
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/2 cup pumpkin purƩe
- 1 egg
- 1 tsp vanilla
- 1 tsp pumpkin pie spice
- 1/2 tsp baking powder
- 1 1/2 cupsĀ @bobsredmillĀ gluten free all purpose flour or flour of your choice!
- 1 cup rolled oats
- 1/2 cup white chocolate chips
Instructions

Preheat oven to 350 degrees.

Combine butter, sugar and brown sugar together until smooth. I used an electric mixer for this.

Add in pumpkin, egg and vanilla. Beat until smooth.

Add in pumpkin pie spice, baking powder and flour. Mix until combined then gently fold in the oats and chocolate chips.

Refrigerate the dough for 30 min to 2 hours.

Form into 1 tbsp balls and place on your baking sheet. Bake for about 18 minutes then let cool.
