Cheddar Cheese Whipped Potatoes
Servings 8 servings
Ingredients
- 4-5 large russet potatoes peeled & chopped into quarters
- 1 tsp baking soda
- 1/3 cup half and half
- 1/4 cup butter
- 1/3 cup Greek yogurt
- 1 cup cheddar cheese shredded (I used unexpected cheddar from @traderjoes!)
- Salt & pepper to taste
- Thyme or chives to garnish
Instructions

Cover potatoes in cold water and 1-2 tsp salt in a large pot then bring to a boil for about 15 minutes. Drain then add back to the pot.

Add baking soda (this makes them fluffy), half and half, butter, Greek yogurt, cheddar cheese and about 1 tsp of salt and pepper to the potatoes.

To whip the potatoes, I used a handheld mixer but you could also use a stand mixer.

Top with fresh herbs of your choice and a pat of butter. Enjoy!
