Whipped up this Creamy Pink Chicken Pasta with stuff I had in my fridge and it turned out too good not to share! 💞 My mom makes a pasta similar to this and my whole family is OBSESSED! It’s just so comforting and always hits the spot. You could honestly skip the cherry tomatoes and garlic if you’re in a hurry, but it adds some freshness and nutrients to the meal 😊
Creamy Pink Chicken Pasta
- 8 oz pasta I used @eatbanza rotini
- 1-2 tbsp olive oil
- 1/2 cup cherry tomatoes
- 2 cloves garlic minced
- 1 cup shredded rotisserie chicken or 2-3 precooked chicken sausages
- 1/2 cup red sauce
- 1-2 tbsp heavy cream
- Kosher salt & pepper
- Parmesan to top
Cool pasta according to package. Drain but don’t rinse your pasta.
Heat a skillet over medium heat. Add the olive oil and cherry tomatoes with a pinch of salt. Sauté until tomatoes become “jammy,” about 5-6 minutes.
Add in garlic and sauté to combine. Add in your chicken or sausage then pour in the red sauce and cream. Stir to combine and bring to a simmer.
Add in the cooked pasta, stir and top with parmesan cheese.
