
I’m willing to accept the L on the decorating, but these Gluten Free Gingerbread Cookies are an absolute MUST this Christmas 🎄 They’re so so delicious- slightly spicy, just the right amount of sweet, and they hold their shape but are still soft and chewy. Plus, we love that they’re easily made gluten free by using @bobsredmill Gluten Free 1:1 Baking Flour! Do yourself a favor and stock your pantry with some Bob’s Red Mill goodies- your future self will thank you!

Gluten Free Gingerbread Cookies
Ingredients
- 1 stick butter (8 tbsp), softened
- 1 egg
- 1/2 cup brown sugar
- 1/4 cup white sugar
- 1/2 cup molasses
- 1 tsp vanilla
- 1/2 tsp salt
- 3 cups @bobsredmill Gluten Free All Purpose Flour
- 1/2 tsp baking soda
- 2 tsp ground ginger
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- Icing to decorate
Instructions

I used my stand mixer with the paddle attachment to combine the first 7 ingredients until fluffy (about 1 minute- you can also use a hand mixer).

Add in 2 cups flour and remaining ingredients. Mix until combined. Gradually add more flour until the dough turns from stick into a manageable dough that doesn’t stick to your hands (about 3 cups flour for me).

Form into 2 balls then refrigerate for 30 min to overnight.

Roll out the dough until it’s about 1/4 in thick then cut with your favorite cookie cutters. Bake for about 12 minutes at 350- time will depend on how big your cutter is!
