If you’re looking for a NYE app that isn’t carb or cheese based, I got you. These Sticky Apricot BBQ Turkey Meatballs are a crowd pleaser and perfect for a lighter app that won’t send you off to bed with a stomach ache before midnight 🥂
Sticky Apricot BBQ Turkey Meatballs
- 1 lb ground turkey
- 1/3 cup Panko breadcrumbs or almond flour
- 1 egg
- 2 cloves garlic minced
- 1 tsp kosher salt
- 1/2 tsp pepper
- 1/2 cup apricot jam
- 1 cup BBQ sauce
- Chives to garnish
- Cheddar Cheese optional
Preheat oven to 350 degrees.
Combine turkey, breadcrumbs, egg, garlic, salt and pepper. Roll into small balls, with the option to add a small chunk of cheese to the center if you’re feeling wild.
Add them to a parchment lined or nonstick sheet pan, being careful not to overcrowd the pan. Bake for 15 minutes.
While they bake, make your sauce. Combine the BBQ sauce and jam on a skillet over medium heat. Let it simmer while the meatballs cook.
Once they’re done, add them to the sauce and toss to coat. Serve with chives as garnish and toothpicks for easy snacking!
