Superfood Chopped Salad with Easy Skillet Chicken
Servings 2 servings
Ingredients
Skillet Chicken:
- 1 chicken breast
- 1/4 tsp kosher salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1/4 tsp paprika
- 1/4 tsp dried oregano
- 1/4 tsp red chili flakes
- Olive or avocado oil
- Squeeze of lemon to serve
Superfood Chopped Salad:
- 1 romaine heart chopped
- 1/2 cucumber chopped
- 1 yellow bell pepper chopped
- 1 small head of broccoli chopped
- 1/3 cup cherry tomatoes halved
- 1 ripe avocado cut into cubes
- 5-6 mint & basil leaves each, chopped
- 1/3 cup feta cheese
Dressing:
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard
- 1/2 lemon juiced
- Pinch of salt pepper and red chili flakes
Instructions

Cut chicken breast in half longways to make it thinner. Cover with parchment paper or plastic wrap and pound until it is equal thickness (I used a cup). Season both sides of the chicken.

Heat a skillet over medium heat. Add a drizzle of oil then add the chicken. Cook for 2-3 minutes each side until cooked through.

Let it rest then slice and serve on the chopped salad with a squeeze of lemon!
