Grilled Halibut with Herb Salsa & Grilled Veggies
Ingredients
Ingredients:
- 2 4 oz halibut filets
- Olive oil
- Salt
- 2 lemons
- Veggies of choice to grill. I did eggplant bell pepper and zucchini!
- Herb Salsa:
- 1 cup parsley
- 1 cup basil
- 1 Serrano chili
- 1 shallot
- 1 lime
- 1 tbsp red wine vinegar
- 1/4 cup olive oil
- Salt

Make your salsa by mincing all ingredients very fine. Season to taste.

Coat your fish and veggies in olive oil and salt. Add a squeeze of lemon to the fish.

Grill at 450-500 degrees until cooked to your liking. For the halibut I did about 3 minutes each side and for the veggies I did 5ish minutes each side, depending on your doneness preferences.

Top with lots of herb salsa and grilled lemon!
