
You MUST make this Mediterranean Couscous Salad this Memorial Day weekend! It’s my mom and I’s absolute favorite because it’s super healthy but also really filling (and of course delicious). I grew up eating couscous all the time and pearl couscous gives salads great texture and the perfect amount of nutty flavor! You will love it!
Mediterranean Couscous Salad
Servings 6
Ingredients
- 1 cup pearl couscous
- 2 cups romaine lettuce
- 1/4 red onion diced
- 1 large cucumber chopped
- 2 small tomatoes chopped
- 1/4 cup fresh parsley
- 3 tbsp fresh mint
- 1/3 cup crumbled feta cheese
Greek Salad Dressing
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 lemon
- 1 clove of garlic minced
- 1/2 tsp Dijon mustard
- 1 tsp oregano
- Salt & pepper
Grilled Greek Chicken
- 1 lb chicken breasts or thighs
- 3 tbsp greek yogurt
- 2 tbsp olive or avocado oil
- Juice from 1 lemon
- 2 garlic cloves minced
- 1 tsp dried oregano
- 1 tsp salt & pepper
Instructions

Combine all ingredients for the chicken marinade and refrigerate for minimum of 3 hours, preferably overnight. Grill at 450/500 degrees for about 3-4 minutes each side, depending on the thickness, until cooked through.

Whisk together all ingredients for the dressing. Set aside.

Toss together the couscous, lettuce, red onion, cucumber, tomato, parsley, mint and feta with the Greek dressing. Top with grilled chicken.
