
Welcome back to Low Carb Lunches (in 15 min or less!) 🍑 Today we have a Grilled Apricot Salad that will knock your socks off. It makes the perfect lunch served with some grilled chicken or prosciutto. It’s so simple, yet really hits the spot. Also perfect for summer 🥰

Grilled Apricot Salad
Servings 1
Ingredients
- 1-2 cups arugula or mixed greens
- 2 tbsp fresh basil chopped
- 1 oz mozzarella cheese
- 2 tbsp pistachios
- 1 medium sized apricot
- Olive oil
- Kosher salt
- Red chili flakes
Balsamic dressing (makes about 4 servings):
- 1/2 cup olive oil
- 1/3 cup balsamic vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- Pinch of salt & pepper
Instructions

Whisk together ingredients for the dressing and set aside.

Cut the apricot in half and remove the seed.

Drizzle with olive oil and salt.

I grilled it on medium heat (300 degreefor about 3-4 minutes on just one side. You can also cook it in a pan or just serve it raw.

Toss the greens in your dressing and add the remaining ingredients.

Top with more dressing and red chili flakes.

Serve with your favorite protein and enjoy!
