
Welcome to my new series: LOW CARB LUNCHES that you can make in 15 minutes or less! Starting off with my favorite lunch that I have pretty much every day during the week, The Snack Plate. It’s very customizable and always satisfying, see below for details!
*Disclaimer: I am not demonizing carbs. I love carbs and you quite literally need them to survive. I do however notice that when I eat a low carb lunch it gives me drastically more energy throughout the day and helps me sustain my busy lifestyle. Give it a shot and see how you feel!!

First, add your veggies. I love cucumbers, carrots, tomatoes, or any raw veg. Next is protein! I love turkey, grilled chicken, hard boiled eggs, or a bean salad. Then you must have dips. I do hummus, @bitchinsauce, or whatever sounds good to me that week. Then I sometimes add a seed based cracker, like the gluten free crispbreads from Trader Joe’s. I add a drizzle of olive oil, salt and pepper to everything and enjoy!
