Mediterranean Style Chicken Bowls

Ingredients
Ingredients:
- Chicken Marinade:
- 1 1/2 lb chicken breasts
- 3 tbsp olive oil plus more to cook
- Juice from 1/2 lemon
- 2 cloves garlic minced
- 1 tbsp honey
- 1/2 tsp dried oregano
- 1/2 tsp dried parsley
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- Greek dressing:
- 1/3 cup extra virgin olive oil
- 3 tbsp red wine vinegar
- Juice from ½ lemon
- 1 tsp dijon mustard
- ½ tsp dried oregano
- ¼ tsp kosher salt & pepper
For the bowl:
- Mixed greens
- White rice
- Kalamata olives
- Pickled onions recipe on my blog
- Diced cucumbers & tomatoes
- Feta cheese
- Hummus
- Tzatziki
- Pita bread
Instructions

Combine all ingredients for chicken marinade and pour over the chicken in either a Tupperware or plastic bag.

Refrigerate for at least an hour, preferably overnight.

Heat about 1-2 tbsp of olive oil in a skillet over medium heat.

Cook the chicken for 4-5 minutes each side until cooked through. I like to chop it into bite sized pieces and then give it a toss back in the pan for 1-2 minutes to get crispy.

Make the dressing and toss your greens (about a handful per bowthen top with rice, chicken, and the remaining toppings.

I like to add another drizzle of Greek dressing on top as well.
