Freezer Friendly Turkey Bacon Breakfast Sandwiches
Ingredients
- 6 English muffins
- 8 large eggs
- 1 cup baby spinach
- 1/2 cup shredded cheddar
- 8 oz turkey bacon
- 1/2 tsp kosher salt
- 1/4 tsp pepper
Instructions

In a large bowl, whisk together the eggs, spinach, salt and pepper. Pour into a greased 8 x 8 baking pan. Bake for 10 minutes, top with shredded cheese, then add back to the oven and continue baking until cheese is melted and eggs are solid. You can also cook the Turkey bacon in the oven at the same time. Most turkey bacon is precooked so you will just need to cook until itās crispy.

Cut eggs into 6 squares and assemble your breakfast sandwiches. Wrap in parchment and place in a large resealable bag to freeze.

To reheat, you can microwave them or I prefer to defrost overnight in the fridge and bake straight in the parchment at 350 for 10-15 minutes until heated through. Freezes well for 1 month.
