
One of my all time favorite spring salads, not just because it’s insanely delicious but because it supports my gut and overall digestive health! 🌱 Arugula, like other dark green vegetables, are a great source of vitamins and minerals, while berries, particularly strawberries and raspberries, are rich polyphenols known as Hydroxybenzoic acids—derivatives of benzoic acid. So not only are you enjoying a delicious, refreshing salad, you are showing your gut some serious love 🫶🏻

Strawberry & Arugula Salad with Blackened Salmon Bites
Servings 2
Ingredients
Salad:
- 4 cups arugula
- 1 cup strawberries chopped
- 1/2 cup candied pecans
- 1 ripe avocado sliced
- 1/4 cup dates pits removed and chopped
- 2 oz goat cheese crumbles
Balsamic Vinaigrette:
- 1/3 cup Olive oil
- 3 tbsp balsamic vinegar
- 1 tsp honey
- 1 tsp Dijon
- 1 small shallot minced
- Salt & pepper
Blackened Salmon Bites:
- 12 oz salmon cut into cubes
- 2 tsp paprika
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp oregano
- 1/8 tsp cayenne
- 2 tsp olive oil
- Lemon wedge to finish
Instructions

For the salmon bites, toss the salmon, seasonings and oil to coat. Air fry at 400 for 5-7 minutes.

For a regular oven, bake at 425 for 8-10 minutes. Finish with a squeeze of lemon.

Toss all ingredients with about 1/2 the dressing until evenly coated.

Serve with the salmon bites and additional dressing if desired.
