Itās my FAVORITE granola because itās so delicious and also sweetened with coconut sugar and made with organic oats.Ā

Granola & Peanut Butter Chocolate Bars
Ingredients
Base:
- 1 3/4 cup organic oats
- 1/2 cup butter or coconut oil
- 1/3 cup coconut sugar
- 1/2 tsp vanilla extract
- 1/4 tsp kosher salt
Filling:
- 1 cup chocolate chips
- 1 cup creamy peanut butter
To top:
- 1/2 cup granola I used the Purely Elizabeth vanilla chocolate chip granola
- Flakey sea salt
Instructions

Line an 8×8 (or close to that sizsquare baking pan with parchment.

Make the oatmeal base. In a skillet over medium low heat, melt the butter. Once melted, stir in the coconut sugar, vanilla and salt. Once combined, stir in the oatmeal until fully combined then set aside.

Next, make the chocolate filling. You can melt the chocolate and peanut butter in the microwave at 30 second increments, stirring in between, at 50% power or use a double boiler.

Assemble the bars by pressing the oatmeal mixture to the bottom of the pan, then adding the chocolate. Top with granola and flakey sea salt and refrigerate for at least an hour before slicing into bars.
