Some of my favorite recipes are the most simple. I love letting the ingredients really shine as they are, and these Crispy Potatoes with Whipped Feta really showcase that. There’s really nothing quite like a crispy, well seasoned potato. And then pair it with some salty, creamy whipped feta? Absolute bliss. This one is too easy not to make!
- 1 1/2 lbs golden baby potatoes cut lengthwise
- 2 tbsp olive oil
- 3 garlic cloves minced
- 1 tsp kosher salt
- 1 tsp dried oregano
- 1/2 tsp pepper
- Lemon & za’atar to serve
- 5 oz feta cheese
- 1/2 cup Greek yogurt
- 2 tsp olive oil
Preheat oven to 45Toss potatoes in olive oil, garlic, oregano, salt and pepper. Cook for 20 minutes until crispy.
In a food processor, blend the feta, Greek yogurt and olive oil until blended and fluffy, about 1 minute. Spread onto one half of a large serving plate.
Serve the potatoes on top of the whipped feta and sprinkle with za’atar and fresh lemon.
