Ever since I was a kid Coconut Shrimp was my go to at any restaurant. If it was on the menu, I was getting it! Eventually my neighbor taught me how to make it and then I was frying up shrimp every weekend at age like 12.
Unfortunately, now that I am in my 30’s, I can’t just gobble down a dozen deep fried shrimp every weekend. Not only does fried food hurt my stomach these days, it just leaves me feeling crappy. Ugh, I hate getting old.
Luckily, I found a way to make these guys WAY healthier than the version you’re used to seeing on the menu at your favorite seafood restaurant and I even found a way to make a delicious REFINED SUGAR FREE sweet and sour dipping sauce. It really doesn’t get much better than this in my opinion.
If you’re not a seafood fan feel free to use bite size pieces of chicken or even tofu. You really can’t go wrong here!
