Moroccan Spiced Lamb & Brown Rice Bowl with Parsley & Feta Dressing

Ingredients

Moroccan Spiced Lamb & Brown Rice Bowl

  • 1 lb ground lamb (beef works too)
  • 1/2 white onion diced
  • 2 carrots chopped
  • 1 tsp coriander
  • 1 tsp cumin
  • 1 tsp red chili flakes
  • 1 tsp salt & pepper
  • 1 tsp turmeric
  • 1/2 tsp cinnamon
  • 3 tbsp tomato paste
  • 1-2 tbsp avocado oil optional

For the Bowl

  • brown rice
  • fresh lemon wedges
  • fresh dill
  • arugula
  • tomato
  • cucumber
  • feta cheese
  • pickled red onion

Parsley & Feta Dressing

  • 1-2 garlic cloves
  • 1/2 cup parsley leaves
  • 1/3 cup Feta cheese
  • 2-3 tbsp olive oil
  • 1/4 cup water
  • 1 tsp apple cider vinegar

Instructions

  1. Heat a non stick pan to medium/high heat and add in ground lamb. Brown for about 5 minutes then use a slotted spoon to remove the meat from the pan and set aside. 

  2. Add white onion and chopped carrots to the same pan, adding a drizzle of avocado oil as needed (the juices from the lamb should suffice). Sauté until carrots become soft and onion becomes translucent. Add all the spices and combine.

  3. Add the lamb back in with tomato paste and 1/2 cup water. Let it simmer until the water is absorbed.

  4. Serve with brown rice, arugula, tomato, cucumber, feta cheese, pickled onions (recipe on my site!), feta cheese, Parsley & Feta dressing and a fresh lemon wedge. I also used fresh dill as a garnish!

Parsley & Feta Dressing

  1. Blend all ingredients in a blender or food processor. Place in the refrigerator until you’re ready to serve. This is amazing on just about anything, to be honest!
