Thai Coconut Meatballs

Ingredients

Meatballs

  • 1 lb grass fed organic ground beef
  • 1 egg egg
  • 1 tbsp cilantro leaves chopped
  • 1 tbsp basil leaves chopped
  • 1 tbsp green onion chopped
  • 1 tsp soy sauce or tamari

Sauce

  • 3/4 can coconut milk
  • 1 tbsp peanut butter
  • 1/2 tbsp red curry paste
  • 1 tbsp soy sauce or tamari
  • 1 tbsp cilantro leaves chopped
  • 1 tbsp basil leaves chopped
  • 1 tbsp green onion chopped

Instructions

  1. Preheat your oven to 400 degrees.

  2. In a large bowl combine beef (or any ground meat), egg, fresh cilantro, green onion, basil, and soy sauce. Combine, form into 1 inch balls, and bake for 8-9 minutes.

  3. Combine all the ingredients for the sauce and let it simmer for about 5-7 minutes.

  4. Serve with brown rice (cauliflower rice for Whole30) and stir fry veggies from Trader Joe's (I just sauté them in sesame oil and some soy sauce).
