Healthy Burrito Bowls

Ingredients

  • 1 lb chicken breast cut into bite size pieces
  • 1 16 oz bag of cauliflower rice
  • 2 limes
  • 2-3 tbsp cilantro
  • 2-3 tbsp taco seasoning
  • 1 tbsp avocado oil
  • avocado
  • Greek yogurt
  • romaine lettuce
  • tomato
  • black beans
  • Mexican cheese
  • hot sauce and/or salsa

Instructions

  1. Season both the chicken and cauliflower rice with the juice from one lime and 1 tbsp of taco seasoning. I make my own with chili powder, paprika, garlic powder, cumin, salt, pepper and a dash of cayenne. Sauté cauliflower rice for 6ish minutes on medium heat and add in some fresh cilantro. For the chicken, cook over medium heat for 4-5 minutes each side or until cooked through. Assemble in your bowl with avocado, shredded romaine lettuce, tomato, black beans, shredded Mexican cheese, Greek yogurt and @sietefoods jalapeño hot sauce. The topping options are endless! 

  2. For the chicken, cook over medium heat in a drizzle of avocado oil for 4-5 minutes each side or until cooked through. Assemble in your bowl with avocado, shredded romaine lettuce, tomato, black beans, shredded Mexican cheese, Greek yogurt and @sietefoods jalapeño hot sauce. The topping options are endless!
