Buffalo Chicken Stuffed Sweet Potato


  • 2 chicken breasts
  • 1 cup Buffalo sauce
  • 1-2 steamed sweet potatoes
  • ranch dressing not Whole30 compliant
  • chives


  1. Add Buffalo Sauce (I used @thenewprimal mild buffalo) and chicken breasts to your InstantPot. Cook on pressure cook for 10 minutes and let it slow release. Add back to the pot and add more sauce if needed. 

  2. Stuff the chicken inside a steamed sweet potato (tbh I microwaved this bad boy for 6 minutes) and top with more buffalo sauce, *not @whole30 compliant* @kitehillfoods almond milk dairy free ranch, and chives.

  3. Chicken stays good 3-4 days in the fridge!
