ONE POT CHICKEN ENCHILADA CASSEROLE

Ingredients

One Pot Chicken Enchilada Casserole

  • 2 cups shredded chicken (you can use a rotisserie chicken or my salsa verde recipe)
  • 1 tbsp avocado oil
  • 1 bell pepper chopped
  • 1/2 white onion diced
  • 1 can black beans drained and rinsed
  • 1 cup cooked brown rice (the microwave bags from Trader Joe’s are 👌🏼)
  • 1 cup enchilada sauce
  • 1/2 cup shredded Mexican cheese
  • Greek yogurt
  • cilantro

Instructions

  1. Heat avocado oil over medium heat in a large pan. Add in your diced veggies and sauté until soft (7-10 minutes).

  2. Add in your black beans, shredded chicken, rice and enchilada sauce. Stir to combine.

  3. Top with cheese and cover until fully melted. Serve with Greek yogurt, cilantro and any other toppings of your choice!
