Caramelized Onion & Brie Grilled Cheese


  • bread of choice I did sourdough
  • 1 tbsp softened butter + more to coat your skillet
  • 1/2 yellow or white onion cut into slices
  • 1 tbsp olive oil
  • 2-4 oz softened Brie cheese
  • 2-3 thinly sliced apple slices
  • 1 tbsp crushed walnuts
  • 1 tsp fresh thyme leaves
  • drizzle of honey


  1. Start by caramelizing your onions. In a small skillet over low heat, add your olive oil and onions, stirring occasionally until caramelized. This will take about 45 minutes to an hour.
  2. Heat a skillet over medium heat (my stove runs hot so I did medium low heat- you don’t want the pan too hot!). Spread softened butter over your bread then assemble your sandwich by spreading the Brie, adding the apples, walnuts, onions, thyme and honey. Place on your skillet and cook for about 3-4 minutes each side until golden brown.
