Spread fat free refried black beans evenly over your crispy tortilla then top with your taco meat. Add another tortilla on top, spread evenly with red enchilada sauce (love the one from @traderjoes), sprinkle some Mexican cheese over the sauce and add a small handful of chopped Roma tomatoes.
Broil for about 2-3 minutes until cheese is melted and top with fresh green onion, Greek yogurt, and hot sauce.
